June was an interesting month for our family.  It seems that we were all going in different directions and now finally, we are all together again.  It wasn't a bad thing, but I am glad to have everyone here together again! 

 

At the beginning of June, our son Eddie went on a week-long trip with the Police Cadets and participated in the SC Association of Law Enforcement competition.  This is the first time their group participated in such events and came in fourth overall.  Not bad for first-timers!  He had a great time and learned a lot in the process.  I thank all who prayed for his safety - traveling and participating in the events.  He plans on joining the Police Corp program which will pay for his college education if he agrees to be a Summerville police officer for three or four years.  We don't know too much about this program yet, but we are excited about it!  (In the meantime, he will earn money working with Mark and real estate investing - more on that in another issue!) 

 

During this time, our daughter Cassie helped out at our church's retreat center & horse farm, where they hosted a two-week camp for underprivileged kids as well as foster kids.  She had fun, but said it was hard work - especially with the temperature reaching in the 90s!  Medicine Wind also has pastor retreats, for those pastors that are experiencing "burnout".  You can visit the web site at: http://www.crossroads-summerville.org/Information/MedicineWind/mdw.htm

 

On June 14th, Mark had his third vasectomy reversal done.  Yes, his third!  First, I must say, if anyone is considering a vasectomy - don't do it!!!  It was the biggest mistake we ever made.  Not a day goes by that I don't regret that decision.  Second, if anyone is considering a vasectomy reversal, do your homework first!   For the first two reversals, we went to a Christian doctor who we both loved, that performs reversals as a ministry at a considerably lower cost than many other doctors.  The lesson we learned - don't look at price, and don't go to a doctor just because he's a Christian.  We wasted time, energy and money until God led us to the vasectomy reversal e-group (you can visit their web site at: http://www.vasreversal.homestead.com )

We live in the same subdivision as our pastor (right around the corner) and had the opportunity to participate in a Backyard Bible Club.  David and Victoria thoroughly enjoyed themselves and learned 5 new Bible verses! 

 

On Father's Day, as Mark was recovering from surgery, he decided that he wanted to eat dinner at a Japanese steak house.  We were there once before, and boy is it yummy!  The kids especially enjoyed the entertainment when they cook right in front of you.  It certainly was a special treat for all of us!

 

At the end of the month, Eddie was away again for a week at Boy Scout summer camp.  He is earning his merit badges and moving up in rank with a goal for Eagle Scout.  He may consider joining the U.S. Air Force after his Police Corp program and the Eagle Scout award will benefit him greatly.  Did you know that you automatically get moved up in rank when joining the service if you have attained Eagle Scout?  This is what I've heard!  If anyone has actually done this, please let me know.  I'd love to hear your story.

I highly suggest eliminating caffeinated and tobacco products.  While it has been ten years since I quit smoking cigarettes, I have to admit, drinking two cups of coffee per day is my Achilles' heel.  I am currently mixing my caffeinated coffee with Mark's decaffeinated coffee.  I plan on weaning myself this way before totally eliminating it from my diet.  This is a tough one, since I have been drinking coffee since I was a little girl!

Directions:
In a large bowl, combine all ingredients and toss.  Keep chilled.  A good idea to keep it colder, longer is to put the frozen corn in while it is still frozen.  It'll thaw out soon enough and will keep the other ingredients nice and cool!  Enjoy!
